I didn't have milk so I used water and maybe that is why it is like a wet cake on pineapple. It's not terrible or maybe I just need to bake it longer.

Found myself in a bind when I had only 30 minutes to make a dish for a party. I had fresh cut pineapple on hand so I searched for any recipe I could find that used pineapple and other on-hand ingredients. Found this recipe. Perfect! This is very good. I saved the juice from the canned pineapple and reduced it on the stove while this was cooking. At the end I added a tbsp of butter, and topped the cobbler with this. Don't discard the juice. Use it to make an awesome topping to make this even more delicious.

This recipe was so simple I was able to gather all the ingredients from my pantry. It was a real crowd pleaser at my dinner party.


  1. If you are using canned pineapple slices, drain the pineapple slices and then squeeze the extra water/juice with your hands. Blend the canned pineapples until they are mushy, about 10 seconds. If you use fresh pineapples, remove the skin, cut into pieces and blend for 10 seconds.
  2. Transfer the blended pineapple into a deep pan (non-stick preferably). Add sugar and cloves and stir well. Cook on medium to low heat until most liquid has evaporated, and the pineapple jam turns golden in color. Stirring constantly and continuously using a wooden spoon to avoid burning. Taste, and add more sugar as needed. Remove and discard the cloves and let cool in the fridge.
  3. Sieve the flour, cornstarch, salt and sugar in a big bowl or container. Soften the butter to room temperature. Combine the flour mixture, butter, and egg yolks together. Knead to form the dough. The dough is ready when it doesn't stick to the hand. If the dough is too crumbly or dry, add a little bit more butter (about 1 tablespoon) until the dough is easy to work with.
  4. Divide the dough and pineapple jam (filling) each into 30 equal rounds. Flatten the pastry dough with your palms and put the pineapple filling in the middle and use the dough to cover the filling. Use your palms to round it up and then shape it into a roll about 1 1/2-inch long shape. Use a small paring knife to make criss-cross patterns on the tart and then brush it with the egg wash (see picture above) using a small pastry brush. Place the pineapple tarts on a tray lined with parchment paper, arrange the pineapple tarts so they are at least 1 inch apart of each other.
  5. Preheat the oven to 350°F (180°C) and bake for 20-25 minutes or until light brown.

  • 3 sticks (350 g) butter, unsalted butter, at room temperature
  • 3 1/2 oz. (100 g) sweetened condensed milk (100 g)
  • 2 egg yolks
  • 18 oz. (500 g) all-purpose flour or plain flour (500 g)

Pineapple Filling:

  • 2 (8 lbs. / 3 1/2 kg or 5 lbs. (2 1/2 kg) pineapple flesh) whole pineapples
  • 1/2 tablespoon cloves, (optional)
  • 1 - 1 1/2 cups (250 - 300 g) sugar, or to taste
  • 1 tablespoon lemon juice

Preparing the batter for your Crushed Pineapple Dump Cake could not be any easier. Just mix together a boxed angel food cake mix and a can of crushed pineapple. The batter will expand rapidly, and just needs to be dumped into an ungreased non-stick bundt pan (or true angel food cake pan if you have one) and baked.

How to Cool Angel Food Cake

While mixing the easy pineapple dump cake together is super simple, there is one trick to getting outstanding results when making the cake. As soon as the pineapple dump cake comes out of the oven, it should be inverted over a small glass bottle to fully cool. This is how to cool angel food cake, and an angel food cake mix is used in making this crushed pineapple cake recipe.

Don’t let this step get you nervous, it is not a big deal at all. The reason it is done is to keep the air in the pineapple angel food dump cake. We don’t want our nice spongy cake to deflate do we?

How to make Pineapple Pie Recipe

  • * You can use store-bought pie dough.
  • *The amount of sugar needed will depend on how sweet the pineapple is. If your pineapple is too sweet, add only ½ cup of sugar. Make this Pineapple pie recipe your own.


  • Combine the flour, sugar, and salt in a large bowl. Add the butter to the flour mixture. With the help of a fork, mix until the texture resembles coarse cornmeal, then add the eggs one by one and continue mixing with the fork or a pastry cutter. (Please check the ingredients list below)
  • Place the dough on a work surface (that is lightly dusted with flour) where you can knead it with your hands. If the dough is very dry, add the two tablespoons of cold milk little by little.
  • Divide the dough into two pieces, then press down on them to form two disks. Cover them with plastic wrap and place in the refrigerator for at least a half-hour. Remove from the fridge when you’re ready to bake, and the filling is completely cold.
  • To roll the dough, use a rolling pin to flatten each disk on a floured surface. Flatten each piece out to form a circle about 12 inches in diameter and &frac18 of an inch thick. Line your pie dish with the first one and use the other to cover the pie after you’ve added the filling.


  • Place the pineapple (chopped into large cubes), sugar, and cinnamon stick in a large pot. Turn the heat to low.
  • In a small bowl, mix the cornstarch with the cup of water until it has completely dissolved, then pour this mixture into the pot with the pineapples and stir.
  • Keep cooking the pineapple mixture for about 10 more minutes, after which it will begin to thicken, like if you were making a gruel. Once it thickens and changes into a more transparent color, keep cooking for 5 more minutes, then remove it from the heat and allow to cool and discard cinnamon stick. The filling needs to be completely cool when added to the pie crust.


  • Line the pie dish with the first disk of dough and pour the pineapple filling over it. Put the other disk of dough over the filling and cut a small vent on the top. Trim the excess dough from the edge of the pie and press down on it to form a seal between the top and bottom halves. Crimp the edge of the dough with your fingers, then brush the top surface of the pie with the beaten egg yolk.
  • Bake the pie in a preheated oven at 350ºF for 50 to 60 minutes. When the pie is ready, it will have a golden crust and the filling will be bubbling.

In case the edges of the pie crust are beginning to brown too soon, cover them with aluminum foil in order to keep them from burning. Let the pie cool for a couple of hours before cutting it, so that the slices come out nice.
