Method of preparation
You can prepare the dough in the mixer or, if you don't have it, you can knead it by hand.
In a bowl of the mixer put the sifted flour and add salt.
Heat 150 ml of water and mix with 1 lgt of sugar, 2 lg of flour and fresh yeast. It is left to activate. Heat the rest of the water slightly. Pour the mayonnaise and start the mixer at low speed. Gradually pour warm water, alternating with oil. When all the ingredients have been incorporated, increase the speed for 5 minutes. At the end, add the butter at room temperature and leave for another 2 minutes. The dough should be soft, non-sticky and fine. Leave in a warm, covered place until it doubles in volume.
The feta cheese is put on the grater with large holes, the yogurt and the egg are added and it is homogenized. Cut the green onion into rounds and incorporate it into the cream cheese.
The dough is divided into 3 equal parts. Spread each part in a rectangular sheet, on the floured table, with a thickness of about 0.5 cm. Spread some of the cream cheese on the sheet and then roll as tightly as possible. It is placed in a round tray lined with baking paper, giving it the shape of a snail. Do the same with the rest of the dough, placing it in the tray following the other pie, thus forming the snail.
Beat the egg well and grease the pie on top.
Put the tray in the preheated oven at 180 degrees until it browns nicely on top.

Because it is not an extremely salty filling, I chose to sweeten the filling but you can also prepare a salty filling in which dill and green onion tails can be added. The pieces of cheese are removed from the brine, passed through the apple grater and mixed with the sugar to taste and the egg yolks.
If the filling is too soft you can add a tablespoon of fine semolina to the composition.
How to make pie sheets in the house!
The sifted flour is placed in a large bowl. Add salt and vinegar then warm water little by little, kneading until incorporated.
