Cheese, basil and spinach pie

An aromatic pie with very few carbohydrates. You can serve it as an appetizer (cold) or as a main course (warm), in addition to a salad.

  • 125 g almond flour + 1-2 tablespoons, if needed
  • 3 tablespoons sesame seeds
  • 1 tablespoon psyllium bran
  • 60 g butter
  • 1 or
  • ½ teaspoon of salt
  • 200 ml fatter fermented cream (minimum 20% fat)
  • 300 g telemea or greasy cottage cheese
  • 150 g grated cheese
  • 4 eggs
  • 1 bunch of fresh basil (I used frozen)
  • 70 g spinach leaves
  • 1-2 tablespoons grated Parmesan cheese
  • salt, pepper and other spices to taste

While the dough is being prepared, the oven is heated to 200 degrees C
Mix in a bowl the almond flour, sesame seeds, psillium bran and salt.
Add the diced soft butter and egg, and mix until a smooth dough is obtained.
The dough is spread in a rectangular shape (20/30 cm), previously greased with butter, forming a base and edges of about 2-2.5 cm.
Put the tray in the oven for a few minutes.

In a bowl, mix the telemeau / cottage cheese with the grated cheese, chopped basil and eggs. Pour half of the mixture into the dough tray, place the spinach leaves in a layer, then pour over the rest of the filling, leveling with a spoon. Sprinkle with grated Parmesan cheese.

Bake at 200 degrees C for 25-30 minutes, until it catches the surface and browns slightly. Towards the end, it can be covered a little with aluminum foil.

The pie is served hot or cold. Cut into cubes, goes perfectly as a packaged snack or picnic.

Great bread for breakfast.
I made it from a kilogram of flour, but in order for it to be more delicate and to fit better in the tray, without being crowded, it is good to be made of less flour.

-1 kg of white flour
-3 tablespoons sugar
-150 gr. telemea given by grater
-150 gr. margarine
-30 gr. fresh yeast
-600 ml. milk
-an egg
-a pinch of salt
-3 tablespoons oil
-a tablespoon of poppy seeds

Dissolve the yeast with a spoonful of sugar and 100 ml of milk, add enough flour to make a pancake-like dough. Mix well and increase until it doubles in volume.

In a bowl sift the rest of the flour, in which we will add the salt powder, the remaining oil and sugar.


In the middle we make a hole in which we will put the mayo. We mix and add the warm milk.

We start to knead until the dough becomes smooth and elastic.



We increase it, covered with a towel, until it doubles in volume.


When it has grown, we put it on the work table and divide it into 5. Four parts to be equal, and the fifth to be bigger.

The 4 smaller balls of dough, we will spread them in sheets, not too thin.

We are preparing a larger tray. I used the white tray from the stove.
I greased it with melted margarine and powdered it with flour.
I took the first sheet and put it in the tray. I greased it well with melted margarine, I sprinkled grated telemea, and on top I sprinkled sugar.



I did the same with all 4 sheets, overlapping them. The last one remains unfulfilled.


We will cut the stack of sheets into 8 equal parts, starting from the middle, towards the outside, where we will leave a margin of a few millimeters.



The resulting 8 corners, after cutting, we will turn them outwards. The middle will remain empty.




The fifth ball, we spread it in a roll, which we will weave in two. We will gather it and we will place it in the middle, left empty, at the 4 sheets.


We raise it, cover it with a towel.
When it is ready, grease it with beaten egg, sprinkle with poppy seeds in the middle and put it in the preheated oven for about 40 minutes.

-2 sheets of puff pastry dough
(I made a dough at home)
-1 kg of potatoes
-500 gr sour cream

We boil the washed potatoes in their skins.
After they have cooled, we clean them and cut them into thinner slices.
Put the sour cream in a bowl, add the finely chopped parsley, salt, pepper, nutmeg and delicately, mix everything and set aside.



We are preparing a dish that we can put in the oven.
Grease the bowl with butter and line it with a sheet of dough.



over the dough we will put a row of potato slices, then we will put the cream, another row
of potatoes, sour cream again until done.



Cover with the second sheet of dough and glue the edges together.
Grease the pie with beaten egg and put it in the preheated oven for about 40 minutes.
Serve hot with a cabbage salad, in my case, or any salad we like.
