100 g sugar

Raw Vegan Joy Joy, health, flavors and color
Yesterday I celebrated a year of raw vegan meetings in Cluj.
It was a warm, intimate meeting full of raw goodies. We felt very good together, as evidenced by the late hour of the night when we left the Samsara Tea House. Some pictures from the event can be found here.
I prepared for this Potluck a basil pesto, chia seed caviar and this berry cake.
I have also said on other occasions that I feed myself very simply, processing as little food as possible that I eat, but on the occasion of these meetings, because I know that few people are as strict as me, and because I want to pamper them, I give free rein to my creativity in terms of raw sweets. Here is the recipe for the most flavorful cake I've made so far:
- Rocks - 500 g - 300 g - 500 g - 70 g
- Fruit cream - 500 g - 200 g - 100 g - 500 g - 5 tablespoons - 4 pieces (inside) - 3 tablespoons - 1 knife tip
- Topping - 200 g
Lately I have changed some things in the way I prepare the ingredients for raw sweets. In this case, for the countertop, I crushed cashews and almonds with the help of a grinder (my juicer also has this option).
I kneaded the almond flour, the cashew flour, the coconut oil and the dates until the whole composition was well homogenized, then I pressed it in a culinary circle.
For the cream, for the beginning I put the raspberries and cherries in the blender and chopped them using the ice option. I heated the palm oil in a bain-marie to 40 degrees. The cashew nut was ground as well as for the countertop. After that I mixed all the ingredients in the robot with an S-blade until everything got a creamy consistency. I poured the cream over the counter and left the cake in the freezer for a few hours. I decorated it with frozen berries. It must be taken out of the freezer two hours before and can be stored in the refrigerator for two days.
Method of preparation
First, clean and wash the fruits, cut the strawberries into slices, leave the rest of the fruits whole and put them in a bowl, add the 200 gr of sugar and the juice of a lemon.
Meanwhile, rub the yolks, with the remaining 250 gr of sugar, until they become foam, then beat them again on the steam bath until they thicken. Leave them to cool and start whipping the cream for the first time at low speed, then increase the cite and when it is hard, add the powdered sugar and beat a little more, but be careful not to make it butter.
Take a strainer and drain the fruit and keep the remaining juice.
Now we make the cream. we take the egg cream, we mix it a little, we add mascarpone, peel and juice from a lemon, we mix well and when it is homogenized we take out the mixer and we incorporate the whipped cream mixing from top to bottom with a wooden spoon so as not to cut it. We leave it aside and move on to assembling the cake.
So. In a larger tray 35 | 35 cm or 2 smaller with the high board, place in order the biscuits soaked well in the juice left from the fruit when you have completed the first layer put over the biscuits half of the cream if you used the large tray, or a quarter if you used the smaller tray. Over the cream layer we come with another layer of biscuits soaked in fruit juice and over the biscuits the last layer of cream over the cream put the well drained fruits and leave to cool in the refrigerator for at least 3-4 hours, as is the recipe Tiramisu original.
If you have guests who come quickly and you don't know what to do, put it in the freezer for an hour, but not more than an hour. That was all . it's very simple and it comes out very good, at least at home they eat immediately.

Who doesn't love rice pudding ?! Even if you make some improvements, it will be preferred by both the little ones and the big ones. I remember how Grandma measured rice and milk to make us breakfast. I ate it hot, because it didn't get cold, I just put jam or cinnamon on top and breakfast was ready.
Today I thought of trying to make a rice pudding in the shape of a cake, which I wanted to cut into 2 and put a layer of jam, but I gave up, it is so fragile that it can not be cut and certainly it will break. Only after baking did the edge stay a little higher than the middle and so I put the jam on top, the fruit and beat it!

How to make rice pudding cake with berries & # 8211 recipe ideal for little ones
- 250 g round grain rice
- 1,250 ml of milk with 3.5% fat
- 150 g butter with at least 82% fat
- 4 large or 5 smaller eggs
- 200-250 g caster sugar, depending on how sweet you like
- A pinch of salt
- 150 g raspberry jam / strawberries / cherries / etc
- 150-200 g of fresh fruit
Method of preparation:
Preheat the oven to 175 degrees Celsius.
We line a round oven tray with butter and breadcrumbs, but it works very well in a square or rectangular tray. (26 cm diameter)
Put the milk in a large pot to boil, when it boils, add the rice and simmer for about 30-35 minutes, stirring lightly from time to time so that it does not stick. We know that it is sufficiently boiled when the rice grain is completely hydrated. Add the butter and let it cool completely.
Separate the eggs and beat the egg whites with a whisk until they form light waves on the surface. Gradually add the sugar and continue beating until the sugar melts and you get a glossy meringue.
In the cold rice composition add the egg yolks, mix until incorporated.
Add a third of the total amount of foam and mix gently with a spatula.
Pour the rice composition over the remaining egg white foam and incorporate gently with movements from top to bottom.
Pour the composition in the tray lined with breadcrumbs and put it in the oven for 40-45 minutes or until it remains firm enough and a reddish color on top. Take the tray out and let it cool completely, then transfer it to a serving platter.
We grease the surface of the cake with the chosen sweetness, we evenly distribute the fruits and we can serve. Simple, tasty and good-looking! Good job and good appetite!
